- 3 tbsp (45 ml) extra-virgin olive oil (for vinaigrette)
- 2 tbsp (30 ml) white wine vinegar
- 1 tbsp (15 ml) fresh lemon juice (about 1/2 lemon)
- 1 small shallot, minced (about 1 tbsp / 15 g)
- 1 tsp (5 ml) Dijon mustard
- 1 tbsp (15 ml) neutral oil (canola or grapeseed) for searing
- 1 tbsp (6 g) chopped fresh dill

1. Rehydrate the dulse: place dried dulse in a bowl, cover with cold water and let soak 5–10 minutes until softened, then drain and gently squeeze excess water. Set aside.
2. Make the cloudberry vinaigrette: in a small bowl whisk together cloudberry jam, white wine vinegar, lemon juice, minced shallot, Dijon mustard, and 1/2 tsp kosher salt (2 g) until smooth. Slowly whisk in 3 tbsp extra-virgin olive oil until emulsified. Stir in half the chopped dill and half the chives, then season with 1/4 tsp black pepper (0.5 g).
