- 3 tbsp (45 g) unsalted butter, melted and cooled slightly
- 1/2 cup (75 g) raisins (optional)

1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch (23 x 13 cm) loaf pan and line the bottom with parchment for easier removal.
2. In a large bowl, whisk together whole wheat flour, rye flour, cornmeal, rolled oats, dark brown sugar, salt, baking soda, baking powder, and cinnamon (if using) until evenly combined.
3. In a separate bowl, whisk the molasses with the buttermilk until smooth. Add the eggs and whisk until blended, then whisk in the melted butter.
4. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a wooden spoon or spatula just until the dry ingredients are moistened — the batter will be thick. Fold in raisins if using.
5. Transfer the batter to the prepared loaf pan and smooth the top with a spatula. Tap the pan lightly on the counter to settle the batter and release any large air pockets.
6. Bake in the preheated oven for 45–55 minutes, or until the top is firm and a toothpick inserted into the center comes out with only a few moist crumbs. If the top browns too quickly, tent loosely with foil after 30 minutes.
7. Remove from the oven and cool in the pan for 10 minutes, then transfer to a wire rack to cool for at least 30 minutes before slicing. Serve warm or at room temperature with butter, molasses drizzled, or alongside soups and fish.
