- 1/2 cup (120 g) ketchup
- 1 tbsp (15 ml) dill pickle juice
- 1 tsp (5 ml) Worcestershire sauce

- Pinch cayenne or hot sauce, to taste
- Salt and pepper to taste (about 1/8 tsp / 1 g salt, 1/8 tsp / <1 g pepper)

1. Cut and soak: Cut potatoes into 1/4–1/3 inch (6–8 mm) sticks. Place in a large bowl of cold water and soak at least 30 minutes (or refrigerate up to 2 hours) to remove excess starch.
2. Dry and coat: Drain potatoes and pat completely dry with kitchen towels. In a large bowl, toss the dried fries with 1 tbsp (15 ml) vegetable oil and 1 tbsp (15 ml) cornstarch until evenly coated.
