1. Combine the huckleberries, granulated sugar, lemon juice, and salt in a medium saucepan over low heat. Stir gently to distribute the sugar and let sit 3–5 minutes to begin releasing juices.
2. Turn heat to medium-low and bring the mixture to a gentle simmer, stirring occasionally so the sugar fully dissolves. If the berries are very dry, add 1–2 tbsp (15–30 ml) water.
3. Simmer, uncovered, 6–10 minutes, stirring and pressing some berries against the side of the pan with a wooden spoon to create a mix of whole berries and saucy bits. Taste and add the maple syrup now if using, adjusting sweetness to your preference.
