Ingredients
- 1 lb (450 g) cooked blue crab meat, picked (from about 2–3 whole blue crabs)
- 3/4 cup (180 ml) fresh lime juice (about 6–8 limes)
- 3 medium (about 10 oz / 280 g) ripe Roma tomatoes, seeded and diced
- 1 small (about 4 oz / 115 g) red onion, thinly sliced and separated into rings
- 1/2 cup (15 g) fresh cilantro leaves, chopped
- 1 serrano pepper, seeded and finely minced (leave seeds for more heat)
- 1 tbsp (15 ml) extra-virgin olive oil (optional, for a silkier mouthfeel)
- 1 tsp (5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1 ripe avocado, diced (optional)
- Corn tostadas or lettuce leaves, for serving

Regional Notes:
This Tamaulipas Gulf Coast version highlights local blue crab (jaiba) and keeps the mix simple and bright with ripe tomatoes and cilantro instead of heavy cream or mayonnaise found in some inland variations. A hint of serrano pepper provides the regional heat profile typical of Gulf coastal ceviches.
1. Pick the crab meat of shells and check for any stray shell pieces. Place picked crab meat in a nonreactive bowl.
2. Pour the fresh lime juice over the crab meat and gently toss to coat. Cover and refrigerate to let the flavors marry for 10–15 minutes (crab is already cooked; brief marination is sufficient).
3. While the crab marinates, prepare the vegetables: seed and dice the tomatoes, thinly slice the red onion and separate into rings, chop the cilantro, and mince the serrano (taste a small piece first to judge heat).
4. If you prefer a milder onion bite, briefly rinse the sliced onion in cold water and drain well before using.
5. After the short marination, drain about half of the lime juice from the crab (leave enough to keep the mixture bright but not soggy). Add the tomatoes, onion, cilantro, serrano, olive oil (if using), salt, and black pepper to the crab.
6. Gently fold the ingredients together, tasting and adjusting salt, pepper, or serrano heat as needed. If using avocado, fold it in gently at the end to avoid mashing.
7. Chill the ceviche in the refrigerator for another 10–15 minutes to meld flavors, then serve cold on corn tostadas or spooned into lettuce cups as an appetizer.
