- 3 cloves garlic, minced (approx. 9 g)
- 2 tbsp (8 g) fresh sage, chopped (or 2 tsp / 2 g dried sage)
- 2 tbsp (8 g) fresh thyme leaves, chopped (or 2 tsp / 2 g dried thyme)
- 1/4 cup (15 g) fresh flat-leaf parsley, chopped
- 1 tsp (5 g) smoked paprika
- 1 1/2 tsp (9 g) kosher salt, divided (adjust to taste)
- 1 tsp (2 g) freshly ground black pepper, divided
- 1.5 lb (680 g) fingerling potatoes, halved lengthwise
- 1 tbsp (15 ml) fresh rosemary, minced (or 1 tsp / 1 g dried)
- 1 lb (450 g) asparagus, woody ends trimmed
- 1 tbsp (15 ml) capers (optional, for finishing)
- Lemon wedges for serving

1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment.
2. Toss halved fingerling potatoes with 1 tbsp (15 ml) olive oil, minced rosemary, 1/2 tsp (3 g) kosher salt, and 1/4 tsp (0.5 g) black pepper. Spread cut-side down on the prepared sheet and roast 25–30 minutes, turning once, until crispy and tender.
3. While potatoes roast, prepare the herb butter and vegetables. In a small bowl combine 3 tbsp (45 g) butter (softened), minced garlic, chopped sage, chopped thyme, 1 tbsp (15 ml) lemon juice, 1/4 cup (15 g) parsley, 1/2 tsp (2.5 g) kosher salt, and 1/4 tsp (0.5 g) black pepper. Reserve 1 tbsp (15 g) of this butter mixture for potatoes if desired.
4. Prepare asparagus: toss asparagus with 1 tbsp (15 ml) olive oil and 1/4 tsp (1.5 g) kosher salt. If using oven-roasted asparagus, add to the baking sheet during the last 10 minutes of the potato roast. If grilling or pan-charring, hold and cook with the fish (see step 6).
5. Pat trout dry inside and out with paper towels. Lightly season cavities and both sides with remaining salt (about 3/4 tsp / 4.5 g) and pepper. If using the flour dredge for extra crisp skin, place 1/2 cup (60 g) flour on a plate and lightly dust both sides of each trout, shaking off excess.
6. Cook the trout — choose one method:
   a. Pan-Fry (preferred for crisp skin): Heat a large cast-iron or heavy skillet over medium-high heat with 2 tbsp (30 ml) olive oil and 1 tbsp (15 g) of the herb butter. When butter foams and oil shimmers, add trout skin-side down. Cook undisturbed 3–5 minutes until skin is crisp and golden (time depends on fish thickness). Flip carefully and add another tablespoon of herb butter; baste by spooning melted butter over trout while cooking 2–3 minutes more, until flesh flakes and internal temperature reaches 135–140°F (57–60°C). During the last 2–3 minutes, add asparagus to the pan alongside the fish to char, turning once.
   b. Grill (best for whole trout): Preheat grill to medium-high (about 400°F / 200°C). Oil the grate. Stuff each trout cavity with 2 lemon slices and a sprig of thyme/sage; brush skin with oil. Grill trout directly on the grate 4–6 minutes per side (use a fish spatula and be careful), turning once, until skin chars lightly and flesh flakes with a fork (internal temp 135–140°F / 57–60°C). Grill asparagus in a grill basket or directly on the grate alongside the fish until tender-crisp, about 5–7 minutes, turning once.
7. If using roasted potatoes, toss hot potatoes with the reserved 1 tbsp (15 g) herb butter or a little extra chopped parsley and adjust seasoning.
8. To finish the trout, spoon any remaining melted herb butter over the fish and sprinkle with capers if using. Squeeze fresh lemon over each trout.
9. Plate each serving with a whole trout (or a fillet if you prefer), a portion of roasted fingerling potatoes, and a bundle of charred/roasted asparagus. Garnish with extra parsley and lemon wedges.
10. Serve immediately while hot.
