Instructions

Short Description:
A classic creamy potato salad from West Virginia made with local waxy potatoes, hard-boiled eggs, and a mayonnaise-based dressing brightened with mustard and sweet pickle relish for a tangy finish.

Regional Notes:
This Appalachian United States (West Virginia) version emphasizes locally grown waxy potatoes and hard-boiled eggs with a smooth, mayonnaise-forward dressing and tangy add-ins like yellow mustard and pickle relish, reflecting the state's preference for creamy yet slightly tangy potato salads. It is less vinegary than some southern variants and more mustard/pickle-forward than New England styles.

1. Place the cut potatoes in a large pot and cover with cold water by about 1 inch (2.5 cm). Add 1/2 tsp (2.5 g) salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender when pierced with a fork, about 10–12 minutes.
2. Meanwhile, place the eggs in a small saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit 10–12 minutes. Transfer eggs to an ice bath to cool, then peel and coarsely chop. Reserve two egg halves for garnish if desired.
3. When potatoes are tender, drain well and spread on a sheet pan or large bowl to steam off excess moisture for 5 minutes. While still warm but cool enough to handle, transfer potatoes to a large mixing bowl.
4. In a separate bowl, whisk together mayonnaise, yellow mustard, sweet pickle relish, pickle juice, apple cider vinegar, sugar, smoked paprika, 1 tsp (5 g) kosher salt, and 1/2 tsp (1.5 g) black pepper until smooth.
5. Add chopped celery and onion to the warm potatoes, then gently fold in the dressing until the potatoes are coated. Fold in chopped eggs, reserving the two halves for garnish. Taste and adjust seasoning with more salt, pepper, or a splash of pickle juice if you want more tang.
6. Transfer the salad to a serving bowl, cover, and refrigerate at least 1 hour (preferably 2–4 hours) to let flavors meld. Stir gently before serving; add a splash of milk or a spoon of reserved potato cooking water if you prefer a slightly looser texture.
7. Just before serving, sprinkle with chopped parsley, crumbled bacon (if using), and a dusting of smoked paprika. Garnish with reserved egg halves. Serve chilled or at cool room temperature.
