- 1 serrano or jalapeno pepper, seeded and finely chopped (optional)
- 1 tbsp (15 ml) olive oil (optional)
- 4 oz (115 g) queso fresco, crumbled (optional; for authentic regional touch)
- Freshly ground black pepper, to taste (optional)
- Lime wedges, for serving

Unlike some southern or coastal variants, it stays simple and citrus-forward without heavy dressings.

1. Prepare the nopal: rinse pads under cold water. Using a knife, remove any remaining spines and the outer edges, then cut pads into approximately 1/2-inch (1.25 cm) dice.
2. Cook the nopalitos: place diced nopal in a medium pot and cover with water. Add 1/4 tsp (1.5 g) salt. Bring to a boil, then reduce heat and simmer until tender and reduced in sliminess, about 8–12 minutes. Drain and immediately rinse under cold running water to stop cooking and remove excess mucilage. Drain well and transfer to a bowl to cool.
3. Dress the nopal: while still slightly warm or cooled, toss the nopal with 2 tbsp (30 ml) fresh lime juice and 1/4 tsp (1.5 g) salt. If using olive oil, add 1 tbsp (15 ml) now and mix.
4. Combine salad ingredients: add the diced tomatoes, chopped onion, chopped cilantro, and the optional chopped serrano or jalapeno to the bowl with the nopal. Gently toss to combine. Taste and adjust salt and lime as needed.
5. Finish and serve: fold in crumbled queso fresco if using, and season with freshly ground black pepper if desired. Let the salad rest 10–15 minutes at room temperature or chill briefly to allow flavors to meld. Serve with lime wedges.
6. Storage: keep refrigerated in an airtight container up to 2 days; add fresh cilantro and a squeeze of lime before serving to refresh.
