1. Preheat the oven to 425°F (220°C) for the potatoes. Toss the halved fingerling potatoes with 2 tbsp (30 ml) olive oil, 1 tbsp (15 ml) chopped fresh rosemary, 1 tsp (5 g) kosher salt, and 1/2 tsp (1 g) black pepper on a rimmed baking sheet. Roast cut-side down for 25–30 minutes until golden and tender.
2. While the potatoes roast, make the quick-pickled red onion: combine 1/4 cup (60 ml) apple cider vinegar, 1 tbsp (15 ml) water, 1 tbsp (15 ml) sugar, and 1/4 tsp (1.5 g) salt in a small bowl or jar; stir until sugar dissolves. 4. Make the burger mixture: in a large bowl combine 1 lb (454 g) ground elk, 4 oz (113 g) ground pork, 1 large egg (about 50 g), 1/4 cup (30 g) panko breadcrumbs, 1 small minced shallot (about 30 g), 1 minced garlic clove (about 3 g), 1 tbsp (15 ml) Worcestershire sauce, 1 tsp (5 g) kosher salt, 1/2 tsp (1 g) black pepper, and 1 tsp (2 g) smoked paprika.
