This Northern Mariana Islands version emphasizes bold, spicy flavors: a higher ratio of soy sauce and vinegar with raw chopped onion and local hot peppers (donne') for heat. It differs from milder regional variants by leaning into acidity and chiles rather than sweet or thickened versions.
1. In a glass or ceramic bowl combine the soy sauce and vinegar, stirring to blend.
2. Add the finely chopped onion and sliced hot chiles to the liquid. Stir to submerge the onion so it begins to soften in the acid.
3. Stir in the lime or calamansi juice, water if using, black pepper, and sugar if using. Taste and adjust—add more chiles for heat, more vinegar for tang, or a splash more soy sauce for saltiness.
4. Let the fina'denne' sit at room temperature for at least 15–30 minutes to allow flavors to meld and the onion to mellow slightly. For a sharper onion bite, serve sooner; for a milder result, chill for 1 hour.
