- 40 squares of parchment paper or 40 mini cupcake liners (for shaping)

This Tamaulipas Gulf Coast variation highlights locally produced leche de cabra (goat's milk) and abundant native pecans, giving the glorias a pronounced tang and nutty finish. The technique focuses on slow reduction to a precise soft-ball stage so the final texture is creamy and caramel-like, distinct from denser or condensed-milk based versions elsewhere.
1. Preheat the oven to 350°F (180°C). Spread the pecans on a baking sheet and toast 6–8 minutes until fragrant; cool and coarsely chop. Reserve about 2 tbsp (20 g) for topping and set the rest aside.
2. Line a baking sheet with parchment or set out 40 small parchment squares or mini liners for setting the candies.
3. In a heavy-bottomed 4- to 6-quart saucepan, combine the goat's milk, sugar, butter, corn syrup (if using), and a pinch of salt. Warm over medium heat, stirring until the sugar dissolves and the butter melts.
4. When the mixture begins to simmer, stir in the baking soda (the mixture will foam). Reduce heat to medium-low and continue to cook, stirring frequently and scraping the bottom to prevent burning.
5. Cook until the mixture reaches the soft-ball stage, 235–240°F (112–116°C) on a candy thermometer, about 40–60 minutes; or test by dropping a small spoonful into very cold water — it should form a soft, pliable ball. The mixture should deepen in color to a light caramel and thicken noticeably.
6. Remove the pan from heat. Stir in the vanilla and the reserved chopped pecans (leave the reserved 2 tbsp for topping). Beat the mixture vigorously with a wooden spoon for 2–4 minutes to cool slightly and help it lose some gloss and thicken to a spreadable, fudgy consistency.
7. Working quickly but carefully, drop rounded tablespoons of the mixture onto the prepared parchment squares or into liners. Press each gently with the back of a spoon and sprinkle the reserved pecan bits on top.
8. Let the glorias cool and set at room temperature for 1–2 hours, or until firm to the touch. If your kitchen is very warm, chill briefly in the refrigerator until set.
9. Store the candies in an airtight container between layers of parchment at room temperature for up to 1 week.
