Ingredients

- 1/4 cup (15 g) fresh cilantro, chopped
- 1 medium Roma tomato, seeded and diced, about 6 oz (170 g)
- 1 small cucumber, peeled and diced, about 4 oz (115 g)
- 1 serrano chile, seeded and finely chopped (or 1/2 tsp / 1 g crushed chiltepín), optional for heat
- 1 small avocado, sliced, about 8 oz (225 g)
- 1/2 cup (120 ml) Mexican crema or sour cream
- 1/2 small red onion, thinly sliced (about 2 oz / 60 g)
- 1/4 cup (60 ml) white vinegar
- 2 tbsp (25 g) granulated sugar
- 1/4 cup (60 ml) cold water
- 1/4 cup (30 g) crumbled queso fresco or cotija
- 1 tbsp (15 ml) vegetable oil (for cooking, if preferred over olive oil)
- Freshly ground black pepper and extra cilantro for garnish

Regional Notes:
This Sonoran version highlights local seafood (shrimp is common) dressed simply with lime, cilantro and fresh chiles rather than heavy sauces. Pickled red onion and a squeeze of fresh lime give the tostadas the bright, tangy finish typical of Northern Mexico’s coastal preparations; chiltepín or serrano provide regional heat when desired.

1. Pickle the onion: place thinly sliced red onion in a small bowl. Whisk together 1/4 cup (60 ml) white vinegar, 2 tbsp (25 g) sugar, 1/4 cup (60 ml) water and 1/4 tsp (1.5 g) of the salt until sugar dissolves. Pour over the onion, press to submerge, and set aside to mellow while you prepare other components (at least 15 minutes).
2. Make the pico: in a medium bowl combine diced tomato, diced cucumber, chopped cilantro, chopped serrano (if using), 1 tbsp (15 ml) lime juice and 1/4 tsp (1.5 g) salt. Mix and refrigerate briefly.
3. Prepare the crema: stir together 1/2 cup (120 ml) Mexican crema with 1 tbsp (15 ml) lime juice and a pinch of salt; adjust to taste. Keep chilled.
4. Season the shrimp: pat shrimp dry, then toss with minced garlic, remaining 3/4 tsp (about 4 g) salt and 1/4 tsp (1 g) black pepper and 1 tbsp (15 ml) olive oil.
5. Cook the shrimp: heat a large skillet over medium-high heat and add 1 tbsp (15 ml) vegetable oil or olive oil. When shimmering, add shrimp in a single layer and sear 1–2 minutes per side until opaque and just cooked through. Remove from heat and squeeze 1 tbsp (15 ml) lime juice over the shrimp; let rest.
6. Assemble tostadas: warm tostada shells briefly in a 350°F (175°C) oven or on a dry skillet 1 minute per side. Spread about 1–2 tbsp (15–30 ml) lime crema on each shell, then arrange 3–4 shrimp per tostada (roughly 2–3 oz / 50–75 g seafood per tostada).
7. Top and finish: spoon pico over the shrimp, add a couple of avocado slices, a few rings of pickled red onion, and a sprinkle of crumbled queso fresco. Garnish with extra cilantro, a crack of black pepper and lime wedges.
8. Serve immediately as a shareable appetizer (6 tostadas) with extra hot sauce or fresh chiles on the side.
