Ingredients

- 1 small head green cabbage (or 12 oz / 340 g coleslaw mix), shredded
- 1 cup (240 ml) mayonnaise
- 2 tbsp (30 ml) apple cider vinegar
- 1 tbsp (12 g) granulated sugar
- 1/2 tsp (3 g) celery seed (optional)
- 1 (8 oz / 227 g) box saltine crackers or 1/2 loaf crusty bread
- 2 tbsp (30 ml) vegetable oil or melted butter for corn
- Fresh cracked black pepper and lemon wedges for serving
- Heavy-duty gloves and an oyster knife (for shucking, optional if serving oysters whole after roasting)

1. Prepare the fire or grill: build a wood fire and let it burn down to hot coals, or preheat a charcoal or gas grill until you have a bed of steady hot coals and a zone of direct high heat. If using a gas grill, preheat to high (500°F / 260°C) and create an indirect cooler zone.
2. Clean oysters: scrub shells under cold running water to remove grit. Keep oysters chilled until ready to roast.
3. Prepare sides — potatoes: toss halved new potatoes with 2 tbsp (30 ml) olive oil, 1/2 tsp (3 g) kosher salt, and 1/4 tsp (0.5 g) black pepper. Parboil potatoes in salted water 8–10 minutes until just tender, drain and place into a large foil packet (or a shallow pan) for finish-roasting on the grill or beside the coals.
