Ingredients
- 2 cups (300 g) cooked diced nopalitos (about 3–4 medium pads raw, cleaned and diced)
- 2 medium (about 1 1/2 cups / 225 g) Roma or vine tomatoes, seeded and diced
- 1/2 medium (about 1/2 cup / 75 g) red onion, thinly sliced
- 1/2 cup (15 g) fresh cilantro, chopped
- 3 tbsp (45 ml) fresh lime juice (about 1–2 limes)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 tsp (5 ml) honey or agave syrup (optional, to balance acidity)
- Salt to taste
- Freshly ground black pepper to taste
- 1 medium (about 150 g) avocado, diced (optional)
- 4 oz (115 g) queso fresco, crumbled (optional)

This Tamaulipas version emphasizes diced, boiled nopalitos dressed simply with fresh lime juice and olive oil rather than heavy vinegar or mayonnaise-based dressings found elsewhere. The inclusion of crumbled queso fresco or diced avocado is a common regional addition on the Gulf Coast that adds local creaminess without overpowering the cactus flavor.
1. Prepare the nopales: remove any spines and scrape off glochids, rinse under cold water, then cut into 1/2-inch (1 cm) dice. Place diced nopales in a pot of boiling salted water and boil 8–10 minutes until tender and no longer slimy. Drain and rinse under cold water, rubbing lightly to remove remaining mucilage. Pat dry with paper towels.
2. In a large bowl combine the cooked nopalitos, diced tomatoes, sliced red onion, and chopped cilantro.
3. In a small bowl or jar whisk together the lime juice, olive oil, honey or agave (if using), and a pinch of salt and pepper until emulsified.
4. Pour the dressing over the salad and toss gently to coat. Taste and adjust salt and pepper as needed.
5. Fold in the diced avocado if using, and sprinkle crumbled queso fresco on top just before serving.
6. Let the salad rest 10–15 minutes at room temperature (or chill 20–30 minutes) to allow flavors to meld. Serve chilled or at room temperature.
