- 1 cup (200 g) pearl barley (dry)
- 3 cups (720 ml) low-sodium chicken stock
- 1 small yellow onion, finely chopped, about 4 oz (115 g)

1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil.
