Instructions

Short Description:
Small, savory bison meatballs seasoned with prairie herbs and spices, pan-seared and finished in a sweet-tart Saskatoon berry sauce. Served as a shareable starter or canapé-sized finger food.

Regional Notes:
This Alberta variation uses locally sourced ground bison and prairie herb notes (thyme, sage, crushed juniper) to reflect the Canadian Prairies. The meatballs are commonly paired with a Saskatoon berry sauce — a regional fruit from the prairie provinces — which provides a sweet-tart contrast specific to Alberta and neighboring prairie cuisine.

1. Make the Saskatoon berry sauce: In a small saucepan combine Saskatoon berries, brown sugar, maple syrup, balsamic vinegar, 1/4 cup (60 ml) water, and lemon juice. Bring to a gentle simmer over medium heat and cook 6–8 minutes, mashing berries with a spoon to release juices.
2. Thicken the sauce: Stir in the cornstarch slurry and simmer 1–2 minutes until glossy and slightly thickened. Season with salt and pepper to taste. Remove from heat and keep warm or set aside to cool slightly.
3. Prepare meatball mixture: In a small bowl soak breadcrumbs in milk for 2–3 minutes. In a larger bowl combine ground bison, chopped bacon, soaked breadcrumbs, egg, chopped onion, garlic, thyme, parsley, sage, crushed juniper, salt, and pepper. Mix gently with your hands or a spoon until just combined — avoid overworking.
4. Portion the meatballs: Form the mixture into approximately 24 small meatballs (about 1 inch / 2.5 cm diameter), which yields appetizer-sized portions for 6 people.
5. Chill briefly: Place formed meatballs on a tray and chill in the refrigerator 15–20 minutes to help them hold their shape (optional but helpful with lean bison).
6. Brown the meatballs: Heat canola oil in a large skillet over medium-high heat. Working in batches if necessary, sear meatballs 2–3 minutes per side until well browned all over. Reduce heat to medium.
7. Finish cooking and glaze: Lower heat to medium-low and spoon about 1/2 cup (120 ml) of the Saskatoon sauce into the skillet with the meatballs (reserve remaining sauce for serving). Gently toss or spoon the glaze over the meatballs and simmer 3–4 minutes, or until meatballs reach an internal temperature of 160°F (71°C). Stir in butter, if using, for a glossy finish.
8. Serve: Transfer meatballs to a warmed platter, garnish with chopped parsley, and serve with the reserved Saskatoon berry sauce on the side for dipping or drizzling.
