- 2 medium tomatoes (about 10 oz / 280 g), seeded and diced
- 1/2 medium red onion (about 2 oz / 60 g), thinly sliced
- 1/4 cup (15 g) fresh cilantro, chopped
- 1 jalapeno, seeded and finely minced (optional for heat)
- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 g) kosher salt, or to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1/2 tsp (2 g) dried oregano (optional, common in Hidalgo)
- 1 ripe avocado, diced (optional for richness)
- 1/4 cup (35 g) crumbled queso fresco or panela for garnish (optional)

Regional Notes:
This Hidalgo variation commonly uses either grilled or boiled nopal to produce a distinct texture—grilling adds char and a smoky note, boiling yields a cleaner, slightly gelatinous bite. The salad is finished simply with lime juice and olive oil and includes diced tomatoes, sliced onion, and chopped cilantro typical of central Mexico.

1. Prepare the nopal: remove spines and glochids under running water, then trim edges. Choose one cooking method:
   - Boil method: place cleaned pads in a pot, cover with water, add a pinch of salt, bring to a boil and simmer 8–12 minutes until tender and sliminess is reduced. Drain and rinse with cold water.
   - Grill method: heat a grill or skillet to medium-high. Lightly oil the pads and grill 3–5 minutes per side until blistered and slightly charred and tender. Let cool slightly.
2. Slice the cooked pads into 1/4–1/2 inch (6–12 mm) strips or bite-sized pieces; place in a large bowl and set aside to cool to room temperature.
3. Add the diced tomatoes, sliced red onion, chopped cilantro, and minced jalapeno (if using) to the bowl with the nopal.
4. Whisk the dressing: in a small bowl combine lime juice, olive oil, salt, pepper, and dried oregano (if using). Taste and adjust seasoning.
5. Pour the dressing over the nopal mixture and toss gently to combine. If using avocado, add it now and gently fold to avoid mashing.
6. Let the salad rest 10–15 minutes at room temperature (or chill 20–30 minutes) to allow flavors to meld. Taste and adjust salt or lime as needed.
7. Serve chilled or at room temperature, garnished with crumbled queso fresco if desired.
