- 8 cups (2 L) water (for cooking octopus)

- 2 cloves garlic (for cooking octopus)

- 1 tsp (5 g) whole black peppercorns
- 1/3 cup (80 ml) naranja agria juice (sour orange) or substitute 2 tbsp (30 ml) fresh orange juice + 2 tbsp (30 ml) fresh lime juice
- 2 tbsp (30 ml) fresh lime juice (additional)
- 3 tbsp (45 ml) extra-virgin olive oil
- 1 tsp (5 g) dried Mexican oregano (or 1 tbsp fresh, chopped)
- 1/2 tsp (2 g) ground cumin (optional, for regional warmth)
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 1 small red onion, thinly sliced
- 1 medium cucumber, peeled, seeded and diced (about 8 oz / 225 g)
- 2 Roma tomatoes, seeded and diced (about 8 oz / 225 g)
- 2 stalks celery, thinly sliced (about 3 oz / 85 g)
- 1 small habanero, seeds removed and minced (or 1 jalapeno, minced) — use gloves when handling
- 1/4 cup (15 g) fresh cilantro, chopped
- 1 ripe avocado, diced
- 2 tbsp (30 ml) chopped red bell pepper (optional, for color)
- Lettuce leaves or tostadas for serving (optional)
- Lime wedges for garnish

Regional Notes:
This Yucatan version uses a citrus-forward marinade inspired by naranja agria (sour orange) and fresh lime, with local heat from habanero and savory notes from Mexican oregano and a touch of cumin. Unlike generic pulpo salads, the marinade and mild spice profile reflect the peninsula's preference for citrus and piquant chiles rather than heavy cream or mayonnaise dressings.
1. Prepare and cook the octopus: In a large pot bring 8 cups (2 L) water to a gentle boil with 1/2 onion, 2 garlic cloves, 1 bay leaf, 1 tsp (5 g) peppercorns and 1/2 tsp (2.5 g) salt. Lower heat to a gentle simmer. Add the octopus, cover, and simmer until tender when pierced with a fork, about 45–60 minutes (pressure cooker: 12–15 minutes high pressure). Drain and let cool slightly.
2. Slice the octopus: When cool enough to handle, remove the beak if present and cut the tentacles and body into bite-sized pieces (about 1/2-inch / 1–1.5 cm pieces). Place in a large mixing bowl.
3. Soften the onion: While octopus cooks or cools, place sliced red onion in a bowl of cold water for 10 minutes to mellow, then drain well.
4. Make the citrus-spice dressing: Whisk together 1/3 cup (80 ml) naranja agria juice (or substitute), 2 tbsp (30 ml) lime juice, 3 tbsp (45 ml) olive oil, 1 tsp (5 g) dried Mexican oregano, 1/2 tsp (2 g) ground cumin (if using), 1/2 tsp (2.5 g) salt and 1/4 tsp (0.5 g) black pepper. Stir in the minced habanero (use less for milder heat).
5. Combine salad ingredients: To the bowl with octopus add the drained red onion, cucumber, tomatoes, celery, 2 tbsp (30 ml) chopped red bell pepper (if using) and 1/4 cup (15 g) chopped cilantro. Pour the dressing over and toss gently to combine.
6. Marinate briefly and finish: Cover and refrigerate 20–30 minutes to allow flavors to meld (longer marination intensifies citrus flavor). Just before serving, fold in the diced avocado to avoid browning and adjust salt and heat to taste.
7. Serve: Arrange on a platter or individual plates over lettuce leaves or with warm tostadas on the side. Garnish with extra cilantro and lime wedges. Serve chilled or at cool room temperature.
