- 1 lb (454 g) fresh pork chorizo, casing removed (or pre-seasoned Chorizo Queretano if available)
- 1 tbsp (15 ml) neutral oil (vegetable or canola)
- 6 bolillo rolls, split
- 1 1/2 cups (360 g) refried pinto beans, warm (homemade or canned)
- 1/2 cup (120 g) mayonnaise
- 2 medium avocados, sliced (about 12 oz / 340 g total)
- 2 medium tomatoes, thinly sliced (about 10 oz / 280 g)
- 1 small white onion, thinly sliced (about 6 oz / 170 g)
- 1 cup (30 g) shredded iceberg lettuce
- 6 oz (170 g) queso fresco or panela, sliced or crumbled
- 1/2 cup (120 ml) pickled jalapeños, drained (or to taste)
- 2 limes, cut into wedges
- 1/4 cup (15 g) chopped fresh cilantro
- Salt to taste
- Optional: 1–2 tbsp (15–30 ml) salsa roja or salsa verde for serving
Chorizo spice blend (only if using unseasoned ground pork to make Queretano-style chorizo):
- 1 tbsp (8 g) ancho chili powder
- 1 tbsp (7 g) guajillo chili powder
- 1 tsp (2 g) ground cumin
- 1/2 tsp (1.5 g) ground cinnamon
- 1/4 tsp (0.5 g) ground cloves
- 1 tsp (4 g) dried oregano
- 1 tbsp (15 ml) white vinegar
- 2 cloves garlic, minced (about 6 g)
- 1 tsp (6 g) kosher salt
If making chorizo from scratch: 1 lb (454 g) ground pork + the chorizo spice blend above.

Hearty bolillo sandwiches filled with spicy, coarsely ground Queretano-style chorizo, warm refried beans, fresh avocado and queso for a complete main-course torta typical of Queretaro's Bajio region.
Regional Notes:
This Queretano variation uses a local chorizo spice profile (ancho and guajillo peppers with a touch of cinnamon and clove) and is traditionally assembled in a crusty bolillo roll. Compared with other Mexican chorizo tortas, this version leans on the distinctive warm spices of the region and a smear of refried beans to balance the heat.
1. If making Queretano-style chorizo from unseasoned pork: combine the ground pork with the chorizo spice blend (ancho, guajillo, cumin, cinnamon, cloves, oregano, vinegar, garlic, and salt). Mix thoroughly, cover, and refrigerate at least 1 hour (overnight preferred) to develop flavor.
2. Heat 1 tbsp (15 ml) neutral oil in a large skillet over medium heat. Add the chorizo (1 lb / 454 g), breaking it up with a spatula. Cook 8–12 minutes until fully cooked, nicely browned in places, and most liquid has evaporated. Taste and adjust salt.
3. While chorizo cooks, warm the refried beans in a small saucepan over low heat or microwave until hot, stirring occasionally. Thin with 1–2 tbsp (15–30 ml) water if too thick.
4. Lightly toast the bolillo rolls cut-side down on a griddle or in a skillet until golden and crisp, about 1–2 minutes. This prevents sogginess and adds a crisp texture.
5. Spread about 1 tbsp (15 ml) mayonnaise on the top half of each bolillo and 2–3 tbsp (30–45 g) warm refried beans on the bottom half.
6. Build the tortas: on the bean-smeared bottom roll, layer 2–3 tbsp (30–45 g) cooked chorizo, 1–2 slices of queso fresco (about 1 oz / 30 g), 2–3 slices of avocado, a few tomato slices, a small handful of shredded lettuce, and a few onion slices. Add pickled jalapeños to taste and sprinkle with chopped cilantro. Squeeze a little lime juice over the filling and add salsa if using.
7. Close each sandwich with the mayonnaise-spread top roll and press lightly. For a warmer, melded sandwich, heat a dry skillet over medium and press each torta for 1–2 minutes per side (or use a sandwich press) until cheese is slightly softened and bread is warmed through.
8. Serve tortas hot, cut in half if desired, with extra lime wedges and remaining pickled jalapeños or salsa on the side. Adjust salt and cilantro to taste.
