Ingredients
- 1 1/2 lb (700 g) firm (semi-ripe) papaya, peeled, seeded, cut into 1-inch (2.5 cm) cubes
- 1 cup (200 g) piloncillo, chopped or grated (or dark brown sugar if unavailable)
- 1/2 cup (100 g) packed dark brown sugar
- 1 cup (240 ml) water
- 2 medium cinnamon sticks (canela)
- 4 whole cloves
- 1 strip of orange peel (about 2 x 1-inch / 5 x 2.5 cm), pith removed
- 1 tbsp (15 ml) fresh lime juice
- 1 tsp (5 ml) vanilla extract
- Pinch of salt
- Optional: 1 tbsp (15 g) unsalted butter for a glossy syrup

Regional Notes:
This Yucatecan version uses local papaya varieties and piloncillo (unrefined cane sugar) with canela (Mexican cinnamon) and whole clove, giving a deeper, caramel-like flavor distinct to the Yucatan Peninsula. The syrup is lightly perfumed with orange peel and a splash of lime to balance the sweetness in the regional style.
1. Prepare the papaya: peel, halve, remove seeds, and cut the flesh into 1-inch (2.5 cm) cubes; set aside.
2. In a medium saucepan combine the piloncillo, brown sugar, and water. Add the cinnamon sticks, cloves, orange peel, and a pinch of salt.
3. Bring the mixture to a boil over medium heat, stirring occasionally until the piloncillo and sugar dissolve. Reduce heat to low and simmer the syrup 5–8 minutes to meld the spices.
4. Add the papaya cubes to the syrup in a single layer. Raise heat to maintain a gentle simmer, cover partly, and cook 12–20 minutes, stirring gently and occasionally, until the papaya is tender and translucent but still holds shape. (Cooking time varies with ripeness.)
5. Once the papaya is tender, remove from heat. Stir in the lime juice, vanilla extract, and butter if using. Discard the cinnamon sticks, orange peel, and cloves.
6. Let cool in the syrup to allow flavors to deepen. Serve warm, at room temperature, or chilled with several spoonfuls of the spiced syrup spooned over the papaya.
7. Store covered in the refrigerator up to 5 days; flavors improve after a day. Reheat gently if serving warm.
