Ingredients

- 1/4 cup (60 ml) reserved bean cooking liquid or water, plus more if needed
- 1/2 tsp (2 g) ground cumin
- 1 tsp (5 g) kosher salt, or to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 2 tbsp (8 g) chopped fresh cilantro (optional)
- Lime wedges for serving

Regional Notes:
This Baja California version uses local cheeses (queso fresco or queso cotija) and often includes fresh Mexican chorizo for a smoky, salty finish—distinct from plain refried beans in central Mexico. The beans are mashed by hand and loosened with bean cooking liquid rather than heavy cream, reflecting traditional Northern Mexican pantry ingredients.

1. Heat a medium skillet over medium heat. Add the chorizo (no oil needed if it is fatty) and cook, breaking it up with a spatula, until browned and crisp at the edges, about 6–8 minutes. Use a slotted spoon to transfer the cooked chorizo to a paper-towel-lined plate; reserve 1–2 tbsp (15–30 ml) drippings in the pan.
2. In the same skillet with the reserved drippings (add lard or oil if needed), add the chopped onion and cook over medium heat until soft and translucent, about 4–5 minutes. Add the garlic and cook 30–45 seconds until fragrant.
3. Add the cooked pinto beans to the skillet. Stir to combine with the onion and garlic, then begin mashing with a potato masher or the back of a spoon. Leave some beans partially whole for texture—aim for a mostly creamy mixture with occasional whole beans.
4. Stir in the reserved 1/4 cup (60 ml) bean cooking liquid (or water) a little at a time to loosen the beans to a creamy consistency. Add the ground cumin, salt, and pepper; taste and adjust seasoning.
5. Reduce heat to low and fold in about half of the crumbled queso fresco or cotija so it melts into the beans, then fold in the cooked chorizo. If the mixture seems too thick, add up to 2 tbsp (30 ml) more bean liquid or water.
6. Remove from heat and transfer to a serving bowl. Sprinkle the remaining crumbled cheese on top and garnish with chopped cilantro if using. Serve warm with lime wedges on the side for a bright finish.
7. Notes: Queso fresco will give a milder, creamier result; cotija will add saltier, crumbly tang. To make vegetarian, omit chorizo and increase lard/oil to 3 tbsp (45 ml) and finish with a small pat of butter (optional) for richness.
