- 2 tbsp (30 ml) chopped fresh parsley or chopped green onion for garnish

2. While the potatoes cook, place eggs in a small saucepan, cover with cold water, bring to a boil, then remove from heat, cover, and let sit 10–12 minutes. Drain, cool in ice water, peel, and chop.
