- 1/2 tsp (1 g) freshly ground black pepper
- 1 tbsp (15 ml) fresh lemon juice (about half a lemon)
- 2 tbsp (28 g) cold unsalted butter, cut into pieces (for finishing)
- 1/4 cup (15 g) fresh flat-leaf parsley, chopped
- 1 small crusty baguette, about 10 oz (280 g), sliced for serving
- Lemon wedges, for serving

1. Rinse and check mussels: discard any with cracked shells. Tap any open mussel; if it does not close, discard. Scrub shells and pull off beards.
2. Heat oil and butter in a large wide pot or Dutch oven over medium heat until butter is melted and foaming.
3. Add the minced shallot and cook, stirring, until translucent, 2–3 minutes. Add the garlic and cook 30–45 seconds until fragrant, taking care not to brown.
4. Stir in thyme sprigs, bay leaf, and crushed red pepper (if using). Pour in the white wine and increase heat to medium-high; simmer 2–3 minutes to reduce slightly.
5. Add the clam juice (or seafood stock) and bring the liquid to a brisk simmer. Season with 1 tsp kosher salt and 1/2 tsp pepper.
6. Add the cleaned mussels, cover tightly, and steam until mussels open, 5–7 minutes. Shake the pot once or twice during cooking to redistribute mussels. Discard any mussels that remain closed.
7. Remove the pot from heat. Stir in the lemon juice, chopped parsley, and the cold butter pieces a few at a time until the sauce is glossy and slightly thickened. Taste and adjust salt and pepper.
8. Transfer mussels and broth to warm shallow bowls or a large serving bowl. Serve immediately with sliced crusty baguette and lemon wedges for dipping in the broth.
