Ingredients

- 2 lb (900 g) lump crab meat (picked, drained; approx. usable weight)
- 3 tbsp (45 ml) vegetable oil
- 1 medium white onion, about 8 oz (225 g), divided: 1/2 sliced, 1/2 roasted
- 4 garlic cloves, about 12 g, divided: 2 roasted, 2 minced
- 4 roma tomatoes, about 14 oz (400 g)
- 3 dried guajillo chiles, stems and seeds removed (about 9 g)
- 2 dried chile de arbol (optional for heat; about 2 g)
- 1/2 red bell pepper, about 4 oz (115 g), diced
- 1 medium carrot, about 4 oz (115 g), peeled and diced
- 2 corn tortillas, torn into pieces (about 50 g)
- 6 cups (1.4 L) seafood or fish stock
- 1 tsp (5 g) dried Mexican oregano (or regular oregano)
- 1/2 tsp (2 g) ground cumin
- 2 bay leaves
- 2 tsp (10 g) kosher salt, plus more to taste
- 1/2 tsp (2 g) freshly ground black pepper
- 1 tbsp (15 ml) fresh lime juice
- 1/4 cup (15 g) fresh cilantro, chopped, for garnish
- 1 ripe avocado, sliced, for serving (optional)
- 1 1/2 cups (300 g) long-grain white rice (dry)
- 3 cups (720 ml) water (for rice) and 1/2 tsp (3 g) salt (for rice)

Instructions

Short Description:
A hearty Veracruz-style chilpachole made with lump crab meat, a tomato-chile broth, aromatic spices and vegetables, served with steamed white rice to make a complete main course. Brightened with lime and cilantro for a coastal Mexican finish.

Regional Notes:
This Gulf Coast (Veracruz) version highlights fresh jaiba (crab) and a tomato-forward broth scented with guajillo chiles and Mexican oregano rather than the tomatillo- or cream-based variants found elsewhere. Torn corn tortillas and a short simmer give the broth a slightly thickened, rustic texture typical of coastal chilpacholes.

1. Rinse the rice under cold water until the water runs clear. Combine 1 1/2 cups (300 g) rice, 3 cups (720 ml) water and 1/2 tsp (3 g) salt in a medium saucepan. Bring to a boil, reduce to low, cover and simmer 15–18 minutes until tender. Remove from heat and let stand covered.
2. Remove stems and seeds from the guajillo and chile de arbol. Place chiles in a bowl, cover with very hot (not boiling) water and soak 15 minutes until softened. Reserve 1/4 cup (60 ml) of the soaking liquid.
3. While the chiles soak, roast the roma tomatoes, 1/2 of the onion (cut side up) and 2 garlic cloves on a cast-iron skillet or under a broiler until charred and softened, about 8–10 minutes. Transfer to a blender.
4. Add the softened chiles (drained but keep 1–2 tbsp/15–30 ml soaking liquid if dry), the roasted onion and garlic to the blender. Blend to a smooth purée, adding up to the reserved soaking liquid to loosen as needed. Set sauce aside.
5. Heat 3 tbsp (45 ml) vegetable oil in a large heavy pot over medium heat. Add the sliced remaining onion and minced garlic; sauté until translucent, about 3–4 minutes.
6. Add the diced carrot and red bell pepper; cook 3–4 minutes more until beginning to soften. Stir in the torn corn tortillas and lightly toast them in the pan for 1–2 minutes to develop flavor.
7. Pour the blended tomato-chile purée into the pot, stirring to combine. Cook over medium heat 5 minutes, stirring occasionally, until the sauce reduces and darkens slightly.
8. Add 6 cups (1.4 L) seafood stock, bay leaves, oregano, ground cumin, 2 tsp (10 g) salt and 1/2 tsp (2 g) black pepper. Bring to a gentle simmer and cook 10 minutes to meld flavors and allow the tortillas to thicken the broth.
9. Taste and adjust seasoning. If the broth is too thick, add a little extra warm stock or water to reach your desired consistency.
10. Gently fold in the lump crab meat and warm through on low heat 3–5 minutes—do not boil vigorously to avoid breaking up the crab. Remove from heat and stir in 1 tbsp (15 ml) fresh lime juice.
11. Ladle the chilpachole over portions of the steamed rice (or serve rice on the side). Garnish with chopped cilantro and avocado slices if using. Serve immediately with lime wedges.
