Ingredients

- 1 tbsp (15 ml) vegetable oil (for sauté)
- 1 small yellow onion, finely chopped, approx. 4 oz (115 g)
- 2 cloves garlic, minced
- 1 tsp (5 g) ground cumin
- 1 tsp (5 g) chili powder
- 1/2 tsp (2.5 g) smoked paprika
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) black pepper
- 4 oz (113 g) canned diced green chiles, drained (about 1/2 cup / 120 ml)
- 1 cup (240 g) refried pinto beans, warmed
- 8 oz (225 g) shredded cheddar or Chihuahua cheese
- 4 large flour tortillas, 10–12 inch (25–30 cm)
- 3 cups (720 ml) vegetable oil for deep frying (adjust as needed for pot)
- For Mexican rice:
  - 1 cup (185 g) long-grain white rice, rinsed
  - 1 3/4 cups (415 ml) chicken broth
  - 2 tbsp (30 ml) tomato paste
  - 1 tbsp (15 ml) vegetable oil
  - 1/4 cup (40 g) finely chopped onion
  - 1 clove garlic, minced
  - 1/4 tsp (1.5 g) salt
- For guacamole:
  - 2 ripe avocados (about 8 oz / 225 g total)
  - 1 tbsp (15 ml) fresh lime juice
  - 2 tbsp (8 g) chopped cilantro
  - 2 tbsp (30 g) finely chopped red onion
  - 1 small jalapeno, seeded and minced (optional)
  - 1/2 tsp (2.5 g) salt
- For salsa/pico (quick):
  - 1 cup (160 g) diced tomatoes
  - 2 tbsp (30 g) finely chopped onion
  - 2 tbsp (8 g) chopped cilantro
  - 1 tbsp (15 ml) lime juice
  - Salt to taste

5. Add shredded chicken 1 lb (454 g) and 4 oz (113 g) diced green chiles to the skillet; toss to combine and warm through, 2–3 minutes. Remove from heat and stir in 6 oz (170 g) of the shredded cheese (reserve remaining cheese for topping).
6. Warm the refried pinto beans 1 cup (240 g) in a small saucepan or microwave until soft and scoopable.

9. Fry chimichangas: working in batches to avoid overcrowding, carefully lower 1–2 chimichangas into hot oil seam-side down. Fry until golden brown and crisp, turning once, about 2–3 minutes total per chimichanga. Use tongs to remove and drain on paper towels.
