1. Preheat the oven to 375°F (190°C). Butter a 9x13-inch (23x33 cm) baking dish or a 3-quart ovenproof dish.
2. In a large bowl, combine the sliced peaches, 1/2 cup (100 g) of the granulated sugar, cornstarch, lemon juice, 1 tsp (5 ml) vanilla extract, cinnamon (if using), and a pinch of salt. Toss gently to coat. Let the mixture sit 15–20 minutes so the peaches macerate and release juices.
3. After macerating, stir the peaches again and pour the fruit and any accumulated juices into the prepared baking dish, spreading into an even layer.
4. In a medium bowl, whisk together the flour, remaining 1/4 cup (50 g) granulated sugar, baking powder, and 1/2 tsp (3 g) salt.
5. Cut the cold cubed butter into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
