Ingredients

  - 1 cup (120 g) all-purpose flour (for dredging)
  - 2 large eggs, beaten
  - 1 1/2 cups (150 g) fine breadcrumbs
  - 1 tsp (5 g) salt (for breading)
  - 1/2 tsp (2 g) black pepper
  - 1/2 cup (120 ml) vegetable oil (for frying) plus extra as needed
  - 3 medium avocados, sliced
  - 8 oz (225 g) quesillo (Oaxaca cheese) or mozzarella, shredded or pulled
  - 1 cup (240 ml) mayonnaise
  - 2-3 canned chipotle peppers in adobo, minced (adjust to taste) and 1 tbsp (15 ml) adobo sauce
  - 1 small red onion, thinly sliced
  - 1/2 cup (120 ml) pickled jalapeños (or fresh sliced jalapeños), drained
  - 1 cup (loosely packed) papalo leaves (or cilantro if unavailable)

1. Prepare the cemita dough: Whisk the warm milk, sugar, and yeast in a bowl and let sit 5 minutes until frothy. In a large bowl combine flour and salt, cut in butter, then add the yeast mixture and the egg. Mix until a soft dough forms, adding up to the 1/4 cup (60 ml) warm water if too dry.
2. Knead the dough on a lightly floured surface 6–8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place until doubled, about 1 to 1 1/2 hours.
3. Shape and bake rolls: Punch down dough and divide into 6 equal pieces. Shape each into a round roll about 4–5 inches (10–12 cm) wide, place on a parchment-lined baking sheet. Brush tops lightly with water or beaten egg and generously sprinkle with sesame seeds. Cover and let rise 30–45 minutes. Preheat oven to 375°F (190°C).
