Ingredients

- 1 lb (454 g) dried navy beans, picked and rinsed
- 8 oz (225 g) salt pork, diced
- 1 medium yellow onion, finely chopped, approx. 6 oz (170 g)
- 3/4 cup (180 ml) unsulphured molasses
- 1/4 cup (50 g) packed dark brown sugar
- 1 tbsp (15 ml) dry mustard
- 2 bay leaves
- 1 tsp (5 g) sea salt (start with 1/2 tsp and add more at the end if needed)
- 1/2 tsp (1 g) freshly ground black pepper
- 3 to 4 cups (720–960 ml) water or enough to cover beans by about 1 inch (2.5 cm) in the baking pot
- 2 tbsp (30 g) unsalted butter (optional, for richness at finish)

Instructions

Short Description:
Slow-baked navy beans sweetened with molasses and seasoned with mustard, onion, and salt pork until richly saucy and tender. A hearty, protein-rich main dish rooted in colonial Boston trade.

Regional Notes:
This Massachusetts/New England version uses navy beans and unsulphured molasses with salt pork as the primary fat and salt source, reflecting Boston's colonial molasses trade. Unlike southwestern or vegetarian bean casseroles, this recipe emphasizes a sweet-molasses glaze and the traditional salt pork flavor rather than tomato-forward or chili-seasoned variations.

1. Place the navy beans in a large bowl and cover with at least 3 inches (7.5 cm) cold water. Soak overnight (8–12 hours). Drain and rinse.
2. Preheat the oven to 300°F (150°C). Choose a 3–4 quart (3–4 L) bean pot, Dutch oven, or casserole with a lid.
3. In a large saucepan, combine the soaked beans, chopped onion, bay leaves, and just enough water to cover by 1 inch (about 3 cups / 720 ml). Bring to a gentle simmer and cook 20–30 minutes until beans are beginning to soften but not falling apart. Drain, reserving about 1 cup (240 ml) of the cooking liquid.
4. In the baking pot, arrange half of the diced salt pork across the bottom. Add the par-cooked beans on top and scatter the remaining salt pork over the beans.
5. In a bowl, whisk together the molasses, brown sugar, dry mustard, reserved cooking liquid (or 1 cup / 240 ml water if none reserved), salt, and pepper until smooth. Pour this mixture over the beans. Add additional water to bring the liquid level to about 1 inch (2.5 cm) above the beans.
6. Cover the pot and bake in the preheated oven for 2 hours. After 2 hours, uncover and gently stir the beans (use care so beans do not break up). Baste the top with the cooking liquid so beans remain moist.
7. Return uncovered to the oven and continue to bake 2–3 more hours, checking every 30–45 minutes. If they seem dry, add a few tablespoons of hot water. The finished beans should be tender and coated in a thick, glossy molasses sauce; total bake time will be about 4–5 hours.
8. During the last 15 minutes of baking, stir in butter if using for extra richness and adjust seasoning with additional salt and pepper to taste. Remove and discard bay leaves.
9. Let rest 10–15 minutes before serving to let the sauce thicken further. Serve hot as a standalone main entrée; traditional accompaniments include toasted brown bread or a simple green salad if desired.
