- 1 small head green cabbage, about 2 lb (900 g), cored and cut into 6–8 wedges
- 1 tsp (5 g) coarse salt, or to taste (note: reduce if using salt pork or ham hock)
- 2 tbsp (28–30 g) unsalted butter, optional, for finishing
- 2 tbsp (8 g) chopped fresh parsley, for garnish
- 1 tbsp (15 ml) apple cider vinegar or lemon juice, optional, to brighten before serving

1. Place the salt pork pieces or the smoked ham hock in a large stockpot and cover with 10 cups (2.4 L) cold water. Add the halved onion, bay leaves, and whole peppercorns.
2. Bring to a gentle boil over medium-high heat, then reduce to a low simmer. Skim any foam from the surface. Cover partially and simmer 30 minutes to develop a clear, savory broth.
3. Add the potatoes and turnips to the pot. Continue simmering, covered, for 15 minutes.
