- 1 lb (450 g) fresh nopalitos (nopal cactus paddles), cleaned and cut into 1/2-inch (1.3 cm) strips
- 2 medium roma tomatoes, diced — about 1 1/2 cups (250 g)
- 1/2 medium white onion, thinly sliced — about 3/4 cup (90 g)
- 1/2 cup (15 g) fresh cilantro, chopped
- 1 small serrano chile, seeded and finely chopped (optional) — about 1 tbsp (6 g)
- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 3 tbsp (45 ml) extra-virgin olive oil
- 1/2 tsp (3 g) dried oregano (preferably Mexican oregano) — optional
- 1/2 tsp (3 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 2 oz (55 g) queso fresco, crumbled (optional)
- 1 ripe avocado, diced (optional garnish) — about 1 cup (150 g)

Regional Notes:
This Aguascalientes version emphasizes ripe tomatoes, crisp onion and plenty of cilantro, dressed simply with lime juice and olive oil for a fresh, tangy finish. Unlike some regional variants that add heavy dressings or roasted ingredients, this Bajio-style Ensalada de Nopalitos is light, bright, and served cool or at room temperature.
1. Prepare the nopales: Rinse the nopal paddles under cold water, remove any remaining thorns or edges, then slice into 1/2-inch (1.3 cm) strips.
2. Blanch the nopalitos: Bring a medium pot of salted water to a boil. Add the nopalitos and boil until tender and the sliminess reduces, about 8–12 minutes. If the water becomes very slimy, drain and rinse the nopalitos under cold running water once more.
3. Drain and cool: Drain the cooked nopalitos in a colander and spread them on a tray to cool to room temperature, or rinse briefly with cold water to speed cooling. Pat lightly with paper towels to remove excess moisture.
4. Combine vegetables: In a large bowl, add the cooled nopalitos, diced tomatoes, sliced onion, chopped cilantro, and serrano chile if using.
5. Make the dressing: In a small bowl or jar, whisk together the lime juice, olive oil, dried oregano (if using), salt, and black pepper until emulsified.
6. Toss the salad: Pour the dressing over the nopal mixture and toss gently to combine. Taste and adjust seasoning with additional salt or lime juice if desired.
7. Add finishing touches: Fold in crumbled queso fresco and diced avocado just before serving, if using, to keep the avocado from browning.
