Ingredients
- 1 lb (450 g) fresh nopal paddles (nopales), spines removed and diced
- 2 medium (approx. 12 oz / 340 g) ripe tomatoes, seeded and diced
- 1/2 medium (approx. 3 oz / 85 g) white onion, finely diced
- 1/2 cup (15 g) fresh cilantro leaves, chopped
- 3 tbsp (45 ml) fresh lime juice (about 2–3 limes)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 tsp (6 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1 small serrano chile, seeded and finely minced (optional, for mild heat)
- 1 ripe avocado, diced (optional, for serving)
- 2 oz (55 g) queso fresco, crumbled (optional, for garnish)

This Chihuahua-style ensalada de nopalitos highlights fresh local nopales cut into small dice and kept simple with diced tomatoes, white onion, and plenty of cilantro. The dressing is a straightforward lime juice and olive oil mix typical of Northern Mexico, letting the clean vegetal flavor of fresh nopales shine.
1. Prepare the nopales: remove all spines and thick outer edges, rinse well, then slice into 1/2-inch strips and dice. Place diced nopales in a pot of boiling salted water and cook 8–12 minutes, or until tender and the mucilaginous slime has mostly disappeared. Drain and immediately rinse under cold running water to stop cooking and remove remaining slime. Drain well and pat dry.
2. If using serrano, mince and set aside. If using avocado, dice and hold refrigerated until serving.
3. In a large bowl combine the cooled, drained nopales, diced tomatoes, finely diced white onion, and chopped cilantro. Add minced serrano if using.
4. Whisk together the lime juice, olive oil, 1 tsp kosher salt, and black pepper in a small bowl. Taste and adjust seasoning.
5. Pour the dressing over the nopal mixture and toss gently to combine. Let the salad rest 15–20 minutes in the refrigerator or at room temperature to allow flavors to meld.
6. Just before serving, gently fold in diced avocado if using and transfer to a serving bowl. Sprinkle crumbled queso fresco on top if desired and adjust salt and lime to taste. Serve chilled or at room temperature.
