1. Bring a medium saucepan of water to a gentle simmer (not a rolling boil). Add 1 tsp kosher salt, bay leaf, and peppercorns. Add the shrimp and cook until just opaque and firm, about 2–3 minutes depending on size. Immediately transfer shrimp to a bowl of ice water to stop cooking; drain and pat dry. If shrimp are large, cut into bite-size pieces. Chill in the refrigerator while you prepare the other ingredients.
2. In a small bowl, whisk together 2 tbsp lime juice, 2 tbsp olive oil, honey (if using), ground cumin (if using), and a pinch of salt and black pepper to make the dressing. Taste and adjust acidity or salt.
3. In a large mixing bowl combine diced avocados, diced cucumber, halved tomatoes, sliced red onion, minced jalapeño, and chopped cilantro. Gently fold in the chilled shrimp.
