- 1 cup (150 g) green bell pepper, seeded and diced (about 1 medium pepper)
- 1/4 cup (15 g) fresh cilantro, chopped
- 1–2 tsp (5–10 ml) local hot pepper sauce (adjust to taste)
- 1 small scotch bonnet or habanero, seeds removed and minced, optional (about 10 g)
- 1 tbsp (15 ml) extra-virgin olive oil
- 1 tsp (5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- Lettuce leaves or saltine crackers, for serving (optional)

1. Clean and prepare the conch: if whole, remove meat from shell, discard dark membrane, rinse under cold water. Slice into thin strips and pound gently with a meat mallet or heavy rolling pin until slightly tender (about 1–2 minutes), then dice into 1/4-inch pieces.
2. Place the diced conch in a nonreactive bowl and pour the lime juice over it, stirring to fully coat. Let sit at room temperature for 10–15 minutes to lightly cure and brighten the flesh; do not marinate for hours to avoid over-toughening.
3. While the conch cures, combine the diced tomato, red onion, green bell pepper, chopped cilantro, and minced scotch bonnet (if using) in a separate bowl.
