- 1 small yellow onion, finely chopped, about 4 oz (115 g)
- 3 cloves garlic, minced (about 9 g)
- 28 oz (796 g) crushed tomatoes (1 can)

Unlike layered eggplant parmigiana, rollatini are individual roulades; unlike some southern Italian versions, New Jersey cooks often pan-fry the slices briefly for golden edges and serve the rolls over pasta for a hearty entree.

1. Slice eggplants lengthwise into 1/4-inch (6 mm) slices. Lay slices in a single layer on a rack or large tray and sprinkle both sides lightly with 2 tsp (10 g) kosher salt. Let sit 20–30 minutes to draw out moisture and reduce bitterness.
2. While eggplant sweats, make the sauce: heat 2 tbsp (30 ml) olive oil in a medium saucepan over medium heat. Add chopped onion and cook until softened, 5–7 minutes. Taste and adjust salt if necessary (cheese is salty; add sparingly).
8. Assemble rollatini: place a fried eggplant slice on a work surface, spread about 2 tbsp (30–35 g) ricotta filling near the end of the slice, then roll tightly and place seam-side down in the prepared dish on top of the sauce. 11. While rollatini bake, bring a large pot of water to a boil, salt generously, and cook 8 oz (225 g) spaghetti according to package directions until al dente. Drain and toss with 1/2 cup (120 ml) reserved warm tomato sauce to coat.
12. To serve: place a portion of spaghetti on each plate (about 1 cup cooked per person), top with 3–4 eggplant rollatini, spoon extra sauce from the baking dish over everything, and garnish with 2 tbsp (30 ml) chopped fresh basil. Serve hot.
