- Mashed potatoes:
  - 2 lb (900 g) russet or Yukon Gold potatoes, peeled and cut into 1–2 in (2.5–5 cm) chunks
  - 4 tbsp (60 g) unsalted butter
  - 3/4 cup (180 ml) whole milk, heated
  - Salt and black pepper to taste (start with 1 tsp / 5 g salt)
  - 2 tbsp (8 g) chopped fresh chives (optional)
- Maple-butter carrots:
  - 1 lb (450 g) carrots, peeled and cut into 1/2 in (1.2 cm) thick diagonals
  - 2 tbsp (30 g) unsalted butter
  - 2 tbsp (30 ml) Vermont pure maple syrup
  - 1 tbsp (15 ml) fresh lemon juice or apple cider vinegar
  - Salt and black pepper to taste

1. Preheat the oven to 325°F (163°C). Position a rack in the lower third of the oven.
2. Remove the ham from refrigeration 30 minutes before cooking. Place the ham, cut-side down if spiral, in a roasting pan fitted with a rack. Pour 1 cup (240 ml) apple cider or water into the bottom of the pan to keep the ham moist.
3. Make the maple-mustard glaze: In a medium bowl, whisk together 1/2 cup (120 ml) maple syrup, 2 tbsp (30 ml) Dijon mustard, 2 tbsp (30 ml) whole-grain mustard, 1/4 cup (50 g) brown sugar, 2 tbsp (30 ml) apple cider vinegar, 1/2 tsp (2 g) black pepper, 1/4 tsp (1 g) ground cloves, and 1 tsp (2 g) orange zest (if using). 4. Tent the ham loosely with foil and heat in the preheated oven about 10–12 minutes per pound (total ~60–96 minutes for a 6–8 lb ham), until a probe inserted into the thickest part reads about 120–125°F (49–52°C). 11. Transfer ham to a cutting board and carve. Warm any remaining glaze and serve alongside carved ham, mashed potatoes, and maple-butter carrots. Garnish with parsley or thyme if desired.
