Slice chicken thinly against the grain, toss with 2 tbsp (30 ml) oil, lime juice, chili powder, cumin, garlic powder, smoked paprika and salt and let marinate 15–30 minutes while you slice peppers and onions. 2. Heat a large cast‑iron skillet or grill pan over high heat, add a little oil and cook peppers and onions until charred and just tender, remove and keep warm; add chicken and cook in batches 3–5 minutes until cooked through and browned, return vegetables to the pan to combine and serve sizzling with warm tortillas and desired garnishes.
