- 1 1/2 lb (680 g) flank or skirt steak, approx. 1 piece - 1/4 cup (60 ml) fresh lime juice - 1/4 cup (60 ml) fresh orange juice - 1/4 cup (60 ml) vegetable oil - 3 cloves garlic, minced - 1/4 cup (15 g) chopped fresh cilantro - 1 tsp (5 g) ground cumin - 1 tsp (5 g) kosher salt - 1/2 tsp (2.5 g) black pepper - 1/2 tsp (2.5 g) crushed red pepper flakes (optional) - 8 small flour or corn tortillas - Lime wedges, chopped onion and cilantro for serving
1. Whisk lime and orange juices with oil, garlic, cilantro, cumin, salt, pepper and red pepper flakes; place steak in a shallow dish or zip-top bag, pour marinade over steak, refrigerate and marinate 1–4 hours (no longer than 8 hours). 2. Preheat grill to high and oil grates; grill steak 3–6 minutes per side for medium-rare depending on thickness, transfer to a cutting board, rest 5–10 minutes, slice thinly against the grain and serve with warmed tortillas, lime wedges, chopped onion and cilantro.
