Ingredients

- 1 lb (454 g) ground beef
- 1 tbsp (15 ml) vegetable oil
- 1 large onion, chopped (about 1.5 cups / 225 g)
- 3 cloves garlic, minced
- 2 tbsp (16 g) chili powder
- 1 tbsp (6 g) ground cumin
- 1 tsp (5 g) smoked paprika
- 1/2 tsp (2.5 g) dried oregano
- 1 can (14 oz) diced tomatoes, with juices (398 ml)
- 2 cups (480 ml) beef broth
- 1 tbsp (8 g) tomato paste
- 1 tsp (5 g) masa harina (optional, for thickening)
- 1 tbsp (15 ml) apple cider vinegar
- Salt and freshly ground black pepper to taste
- Shredded cheddar and chopped fresh cilantro for garnish (optional)

Instructions

1. In a large pot heat oil over medium-high, add ground beef and brown, breaking into pieces; drain excess fat if needed, then add chopped onion and cook until softened, stir in garlic, chili powder, cumin, paprika and oregano and cook 1 minute until aromatic.
2. Add diced tomatoes, beef broth and tomato paste, bring to a simmer, reduce heat and simmer gently 45–60 minutes until flavors meld; if thicker chili is desired whisk masa harina with a little cold water and stir in, simmer 5 more minutes, finish with vinegar and adjust salt and pepper before serving with cheese and cilantro.
