1. Chill curds: Spread the cheese curds on a plate and place in the freezer for 15–20 minutes to firm up (do not freeze solid). This helps them hold shape while frying.
2. Prepare dredging station: In a shallow bowl combine 1/2 cup (60 g) flour and a pinch of salt for dusting. In a second bowl whisk together 1 cup (120 g) flour, 1/2 cup (60 g) cornstarch, 1 tsp (5 g) baking powder, 1 tsp (6 g) salt, and 1/2 tsp (1.5 g) black pepper.
