1. Preheat the oven to 425°F (220°C). Place a 9-inch (23 cm) cast-iron skillet or ovenproof baking pan in the oven to heat while you mix the batter.
2. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and granulated sugar until evenly combined.
3. In a separate bowl, beat the eggs lightly, then whisk in the buttermilk, maple syrup (or honey), and the melted butter until smooth.
4. Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix. The batter should be pourable but slightly thick.
