- 1/3 cup (67 g) packed dark brown sugar
- 3 tbsp (42 g) unsalted butter (for sauce)
- 2 tbsp (30 ml) maple syrup
- 2 tbsp (30 ml) apple cider (or 1 tbsp apple cider vinegar + 1 tbsp water)
- 1 tsp (5 ml) Dijon mustard
- 1/4 cup (60 ml) heavy cream
- 1/4 cup (40 g) raisins, rehydrated in warm water or apple cider (optional)

1. Preheat the oven to 425 F (220 C). Toss the halved baby potatoes with 2 tbsp (30 ml) olive oil, 1/2 tsp kosher salt, 1/4 tsp black pepper and 1/2 tsp (about 1.5 g) dried thyme (or 1 tsp fresh). Spread cut-side down on a rimmed baking sheet and roast for 25–30 minutes, flipping once, until golden and tender.
2. While potatoes roast, rehydrate the raisins (if using) in 1/4 cup (60 ml) warm water or apple cider for 10 minutes, then drain and reserve the liquid.
3. Pat the pork chops dry and season both sides with salt and pepper. Heat 2 tbsp (30 ml) vegetable oil and 1 tbsp (14 g) butter in a large ovenproof skillet over medium-high heat until shimmering.
4. Sear the pork chops 3–4 minutes per side, until well browned. Transfer the chops to a plate (they will finish cooking in the sauce). Reduce heat to medium and keep skillet on the stove.

10. Remove the pork chops from the oven and let rest 5 minutes. Spoon extra butter-tart sauce over the chops, sprinkle with chopped toasted pecans and chopped parsley, and finish with a grind of black pepper.
