Ingredients
- 2 cups (about 160 g) cleaned flor de palma (palm flowers), trimmed and coarsely chopped
- 3 medium (about 12 oz / 340 g) ripe tomatoes, seeded and diced
- 1 small white onion, about 6 oz (170 g), thinly sliced or finely chopped
- 1/2 cup (packed) (about 30 g) fresh cilantro leaves, chopped
- 3 limes, juiced, about 1/3 cup (80 ml) fresh lime juice
- 1/2 tsp (2.5 g) kosher salt, or to taste
- 1/4 tsp (0.5 g) freshly ground black pepper, or to taste
- 1 small serrano chile, thinly sliced (optional)
- 1 tbsp (15 ml) neutral oil or extra-virgin olive oil (optional, for smoothing acidity)

This Bajio/San Luis Potosi version highlights the local use of flor de palma (palm flowers), which provide a subtle vegetal-floral flavor and tender yet slightly fibrous texture not found in typical green salads. Unlike other Mexican salads that use vinegar-based or creamy dressings, this regional salad is dressed simply with lime juice to preserve the delicate palm-flower character.
1. Prepare the palm flowers: remove any tough outer fibers and hard cores. Bring a medium pot of salted water to a boil. Add the cleaned flor de palma and blanch 3–5 minutes until tender but not falling apart. Taste one piece for texture.
2. Immediately transfer the blanched palm flowers to a bowl of ice water to stop cooking. Drain well and gently squeeze out excess water. Coarsely chop if not already chopped.
3. In a large bowl, combine the chopped palm flowers, diced tomatoes, sliced onion, and chopped cilantro. If using serrano, add thin slices now.
4. In a small bowl or measuring cup, whisk together the lime juice, salt, and pepper (and oil, if using) until combined.
5. Pour the lime dressing over the salad and toss gently to coat all ingredients. Adjust salt, pepper, or lime to taste.
6. Let the salad rest 10–15 minutes at room temperature (or chill 30 minutes) to allow flavors to meld. Serve as a refreshing salad course alongside grilled meats or as part of a regional meal.
