- 1/4 cup (60 ml) dry white wine (or Mexican lager)
- 1 tsp (5 g) smoked paprika
- 1/4 tsp (1 g) cayenne pepper (optional, or to taste)
- 1 tsp (5 g) kosher salt, plus more to taste
- 1/2 tsp (2 g) freshly ground black pepper
- 8 oz (225 g) queso Chihuahua or Monterey Jack, shredded
- 12 small corn tortillas (5–6 in / 12–15 cm)
- 2 cups (150 g) shredded green cabbage
- 2 tbsp (30 ml) lime juice (from about 1 lime)
- 2 tbsp (8 g) chopped fresh cilantro, plus extra for garnish
- 1 ripe avocado, diced (optional)

1. Prep and roast the poblano: hold the poblano over a gas flame or under a broiler, turning until skin is evenly charred, about 6–8 minutes. Place in a bowl and cover 5 minutes to steam; peel, seed, and slice into strips.
2. Make the quick slaw: in a bowl toss shredded cabbage with lime juice, 1 tbsp (15 ml) olive oil, 1 tbsp (4 g) chopped cilantro, and a pinch of salt. Set aside to marinate while you cook.
3. Heat a large skillet over medium-high heat. Add 2 tbsp (30 ml) butter and 1 tbsp (15 ml) olive oil. When butter foams, add the sliced onion and bell pepper; sauté until softened and beginning to brown, 6–8 minutes.
