Ingredients

- 1/2 cup (120 ml) mayonnaise
- 2 tbsp (30 ml) yellow mustard
- 1 tbsp (15 ml) cider vinegar
- 1 tsp (5 ml) lemon juice (optional, for brightness)
- 2 tbsp (8 g) fresh dill, finely chopped
- 2 tbsp (8 g) fresh flat-leaf parsley, finely chopped
- 1/2 tsp (2 g) celery seeds
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/2 tsp (1 g) freshly ground black pepper, plus more to taste

1. Place the cut red potatoes in a large pot and cover with cold water by about 1 inch; add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender when pierced with a fork, about 10–12 minutes.
2. While the potatoes cook, place the eggs in a small saucepan, cover with cold water, bring to a gentle boil, then remove from heat and cover; let sit 10–12 minutes. Transfer eggs to an ice bath to cool, then peel and chop.
3. When potatoes are done, drain and immediately plunge into an ice bath or under cold running water to stop cooking and cool to room temperature; drain well and transfer to a large mixing bowl.
4. In a separate bowl, whisk together the mayonnaise, yellow mustard, cider vinegar, lemon juice (if using), celery seeds, kosher salt, and black pepper until smooth.
5. Add the chopped eggs, sliced celery, and finely chopped red onion to the cooled potatoes. Pour the dressing over the potato mixture and gently fold until evenly coated, taking care not to mash the potatoes.
6. Fold in the chopped dill and parsley, tasting and adjusting seasoning with additional salt and pepper as needed.
