- 1/2 medium white onion, thinly sliced, about 4 oz (115 g)
- 1/2 cup (8 g) cilantro leaves, chopped
- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1/2 tsp (3 g) kosher salt, or to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 1 small serrano or jalapeño, seeded and minced (optional)
- 1 medium avocado, diced, about 6 oz (170 g) (optional)
- 4 oz (115 g) queso fresco, crumbled (optional)

Instructions

Short Description:
A bright, refreshing salad of tender nopales (cactus paddles) tossed with fresh tomatoes, white onion, cilantro, and a simple lime-olive oil dressing. Light, slightly tangy, and perfect as a chilled accompaniment or a starter.

Regional Notes:
This Baja California variation emphasizes fresh, simple flavors—ripe tomatoes, crisp onion, and bright cilantro—rather than heavy seasonings or cooked components. The dressing is a light mix of lime juice and olive oil, reflecting the region's coastal preference for clean, citrus-forward tastes.

1. Prepare the nopales: remove any remaining spines with a knife, rinse well, and cut into 1/2-inch (1.5 cm) pieces.
2. Bring a medium pot of salted water to a boil. Add the nopales and boil until tender and the sliminess is reduced, about 8–12 minutes depending on thickness.
3. Drain the nopales and immediately rinse under cold running water to stop cooking and remove residual mucilage. Pat dry with a towel or let drain in a colander until no excess water remains.
4. In a large bowl combine the drained nopales, diced tomatoes, sliced onion, chopped cilantro, and minced pepper if using.
5. In a small bowl whisk together the lime juice, olive oil, salt, and pepper. Taste and adjust seasoning.
6. Pour the dressing over the salad and toss gently to combine. Fold in diced avocado and crumbled queso fresco if using, taking care not to mash the avocado.
7. Let the salad rest chilled or at cool room temperature for 15–30 minutes to allow flavors to meld. Taste and adjust salt or lime before serving.
8. Serve chilled or slightly cool as a salad course or accompaniment.
