- 2 lb (900 g) Prince Edward Island potatoes (Yukon Gold or similar), scrubbed and cut into 1-inch (2.5 cm) pieces
- 3/4 cup (150 g) pearl barley, rinsed
- 1/2 cup (120 ml) dry red wine (optional; use extra stock if omitted)
- 6 cups (1.4 L) beef stock (preferably low-sodium)
- 2 tbsp (30 g) tomato paste
- 1 tbsp (15 ml) Worcestershire sauce
- 2 bay leaves
- 3 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 tsp (5 g) coarse sea salt, plus more to taste
- 3/4 tsp (2 g) freshly ground black pepper, plus more to taste
- 2 tbsp (8 g) fresh parsley, chopped, for garnish

7. Taste and adjust seasoning with additional salt and pepper as needed. If the stew is too thin, simmer uncovered 10-15 minutes to reduce; if too thick, stir in up to 1/2 cup (120 ml) hot stock or water.
