Ingredients
- 4 catfish fillets, approx. 6–8 oz (170–225 g) each (total approx. 1.5–2 lb / 680–900 g)
- 1 cup (240 ml) buttermilk
- 1 tbsp (15 ml) hot sauce (optional)
- 2 cups (300 g) yellow cornmeal

1. Pat the catfish fillets dry with paper towels. Place buttermilk and hot sauce (if using) in a shallow dish and add the fillets to soak while you mix coatings and prepare sides (15–30 minutes).
2. Combine cornmeal, flour, smoked paprika, cayenne, garlic powder, onion powder, 1 tsp kosher salt, and 1/2 tsp black pepper in a wide shallow bowl or rimmed baking sheet for dredging.
3. Prepare tartar sauce: whisk mayonnaise, dill pickle relish, lemon juice, Dijon mustard, and parsley in a small bowl. Season with salt and pepper to taste. Refrigerate until serving.
4. Make coleslaw: in a large bowl whisk mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss in shredded cabbage and carrots until evenly coated. Chill while you fry.

6. Heat oil: pour 4–6 cups (1.0–1.5 L) oil into a deep heavy pot or Dutch oven to a depth of about 2–3 inches (5–7.5 cm). Heat to 350°F (175°C). Use a thermometer for accuracy.
7. Remove catfish from buttermilk, letting excess drip off, then dredge firmly and evenly in the cornmeal mixture, pressing to adhere. Place dredged fillets on a wire rack and let rest 5 minutes to set the crust.
8. Fry hushpuppies first (optional) because they take slightly longer: drop tablespoonfuls of batter carefully into the hot oil, frying in batches so oil temperature holds.
