- 8 bone-in chicken pieces, approx. 3 lb (1.36 kg) total (mix of thighs and drumsticks)
- 1/3 cup (45 g) all-purpose flour, for dredging
- 1 1/2 tsp (9 g) fine salt, divided
- 1/2 tsp (1 g) black pepper, divided
- 2 tbsp (30 ml) vegetable oil
- 2 tbsp (28 g) unsalted butter
- 1 large yellow onion, sliced, about 8 oz (225 g)
- 1 medium red bell pepper, seeded and sliced, about 6 oz (170 g)
- 3 cloves garlic, minced, about 9 g
- 2 tbsp (16 g) curry powder (mild or medium), packed
- 1/4 tsp (0.6 g) cayenne pepper (optional, to taste)
- 14.5 oz (411 g) canned diced tomatoes, with juices
- 1 1/2 cups (360 ml) low-sodium chicken stock
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (12 g) dark brown sugar
- 1 tbsp (15 ml) apple cider vinegar
- 1/3 cup (50 g) raisins
- 1/3 cup (30 g) slivered almonds, toasted (plus extra for garnish)
- 2 tbsp (8 g) fresh parsley, chopped, divided
- 2 green onions, thinly sliced, for garnish
- 2 cups (370 g) long-grain white rice, uncooked
- 3 1/2 cups (830 ml) water (for cooking rice)

It differs from coastal British-Indian versions by its Southern braise technique and serving over plain long-grain rice.
1. Pat the chicken pieces dry and season evenly with 1 tsp (6 g) salt and 1/4 tsp (0.5 g) pepper. Dredge each piece lightly in the 1/3 cup (45 g) flour, shaking off excess.
2. Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Brown the chicken in batches, 5–7 minutes per side, until golden (chicken will not be cooked through). Transfer browned chicken to a plate.
3. Reduce heat to medium and add the butter to the pot. When melted, add the sliced onion and bell pepper and cook, stirring occasionally, until softened and beginning to brown, about 6–8 minutes.
4. Stir in the minced garlic, curry powder, and cayenne (if using) and cook 1 minute until fragrant.
5. Add the diced tomatoes with their juices, chicken stock, Worcestershire sauce, brown sugar, apple cider vinegar, and the remaining 1/2 tsp (3 g) salt and 1/4 tsp (0.25 g) pepper. Scrape any browned bits from the bottom of the pot.
6. Stir in the raisins, then nestle the browned chicken pieces back into the sauce, skin side up. Bring to a gentle simmer, cover, and reduce heat to medium-low. Simmer until the chicken is cooked through and tender, about 30–35 minutes (internal temperature 165°F / 74°C).
7. While the chicken simmers, toast the slivered almonds in a dry skillet over medium heat, shaking frequently, until fragrant and lightly browned, 2–3 minutes. Set aside.
8. Cook the rice while the chicken finishes: rinse the rice under cold water until the water runs clear. In a medium saucepan combine the rinsed rice and 3 1/2 cups (830 ml) water with a pinch of salt. Bring to a boil, reduce to low, cover tightly and simmer 18 minutes. Remove from heat and let rest, covered, 5 minutes; fluff with a fork.
9. When the chicken is done, taste the sauce and adjust seasoning with salt, pepper, or a pinch more sugar or vinegar if needed. Stir half of the toasted almonds and 1 tbsp (4 g) chopped parsley into the sauce.
10. To serve, spoon rice onto plates or a platter, place chicken pieces over the rice, spoon sauce and raisins over the top, and finish with remaining toasted almonds, remaining parsley, and sliced green onions as garnish.
