1. Preheat oven to 350°F (175°C). Grease a 2-quart (about 8x8 inch/20 x 20 cm) baking dish with butter and set aside.
2. Remove kernels from the ears of corn. Measure out 1 cup (160 g) of kernels and place them in a blender or food processor with the whole milk and heavy cream; pulse until mostly smooth but still slightly textured (about a coarse purée). Transfer to a large mixing bowl.
3. Add the remaining 3 cups (480 g) whole corn kernels to the bowl with the puréed mixture.
4. In a separate bowl, whisk the eggs, melted butter, granulated sugar, vanilla extract (if using), salt, and pepper until combined.
5. Whisk the flour and baking powder into the egg mixture until no dry streaks remain. Pour the egg mixture into the bowl with the corn and purée; stir gently to combine into an even custard.
