- 1/2 tsp (1.5 g) black pepper
- 1/2 tsp (1.5 g) garlic powder
- 1/4 tsp (1 g) cayenne pepper (optional, for heat)
- 1 cup (100 g) plain dry breadcrumbs or crushed saltines (optional for extra crunch)
- Vegetable oil for deep frying, enough to fill a deep pot 2–3 in (5–7 cm) deep (about 2–3 qt / 2–3 L of oil depending on pot size)
- 1 lemon, cut into wedges
- 1 cup (240 g) cocktail sauce or your preferred spicy dipping sauce

Regional Notes:
This Rocky Mountain version follows the Utah/Mountain West tradition of peeling and slicing the testicles, soaking briefly in buttermilk, then double-dredging and deep-frying to a crisp golden finish. It emphasizes a simple seasoned flour/cornmeal coating rather than heavier batters found in some other regions.

1. Pat the sliced Rocky Mountain oysters dry with paper towels. Trim any remaining connective tissue; pieces should be uniform about 1/2-inch thick.
2. Place the slices in a bowl and pour the buttermilk over them. Cover and refrigerate for 30 minutes to 2 hours (brief soak tenderizes and removes any strong flavor).
3. Meanwhile, set up a dredging station: in one shallow bowl beat the eggs; in a second bowl whisk together the flour, cornmeal, 1 tsp kosher salt, black pepper, garlic powder, and cayenne. If using, place breadcrumbs in a third bowl.
4. Remove the slices from the buttermilk and shake off excess. Dredge each piece first in the seasoned flour-cornmeal mixture, then dip into the beaten eggs, then press into breadcrumbs (or back into the flour mixture if not using breadcrumbs) to form an even coating. Transfer to a wire rack while you heat the oil.
5. Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 350–375°F (175–190°C). Use a thermometer to maintain temperature; too cool yields greasy oysters, too hot burns the coating.
6. Fry the oysters in small batches (do not overcrowd) for 2.5–4 minutes, turning once, until deeply golden brown and crisp. Adjust time by size; internal texture should be firm and cooked through.
7. Using a slotted spoon, transfer fried oysters to a paper towel–lined baking sheet and immediately season lightly with additional kosher salt. Keep warm in a 200°F (95°C) oven if frying in multiple batches.
8. Serve hot as an appetizer with lemon wedges and cocktail sauce (or hot sauce) for dipping.
